Broccoli and soy cream linguini


I know this is a really easy and simple recipe that might not even be worth putting on a blog, but I thought that it was important to show how good vegan cream is. I hadn't given it a try until a couple of months and I am amazed. I tried Oat cream first because I didn't like soy milk, but I wasn't very impressed. I am loving soy cream!

So, ingredients: (I made it for two people which for me is half a packet of pasta)

1 tablespoon of olive oil/vegetable oil (is up to you)
1 chopped onion
3 cloves of garlic
half a brocolli, just cut the florets
1 carton of soy cream (or as much or as little cream as you like)
half a packet of linguini
pepper
cayenne pepper

Depending in how cooked you like broccoli start before or after you put the pasta in boiling water, most pastas take around 10 min. I like to start before because I like brocoli with a bit of bite but not too much. So in a pan with hot oil but the garlic, stir and add the onion. When they are both a bit cooked, a bit translucent, add the brocoli florets and stir until almost cooked to your taste and add the cream, pepper and cayenne. Once the sauce is warm and the pasta ready, serve and eat!!



PS: I made it again today with leek instead of onion because I didn't have any and it was just as nice. I think is my favourite pasta recipe right now :)

10 minute Chocolate Pudding!!

This recipe is from the New York Times's food journalist Mark Bittman . I thought I should share it with everyone as it is a really great dessert and it's so easy to make it almost seems like a dream. Warning: This is a really rich dessert so I only recommend it to real chocolate lovers. Serves 8: Ingredients: -450g of silken tofu (a pound) -200g good quality melted dark chocolate (I've made it with 85%, 75% and 65% and its been great with each of them but it really depends on your taste) -3/4 cup of sugar syrup, half water/half sugar -1/2 tsp of cinnamon, good cinnamon otherwise it doesn't taste like anything -1/2 tsp of chilli powder, careful not to use a really hot one -1/4 tsp of vanilla essence Method: -Once you've melted the chocolate, blend it all together, put it into glasses or dishes and refrigerate. Tofulicious Thai Style Stir-Fry

Although this recipe is in no way my own I thought I should share it , since two opinions are always better that one. A food and travel blog that I had never encountered before, but it looks good, and I tell you what  - the pictures are way better than mine.
